- Butter (or substitute with olive oil)
- Fresh Baby Spinach (or frozen, heated and drained)
- Feta Cheese
- Oregano
- Garlic Powder
- Salt (to taste)
Instructions
- Start by cracking the eggs into a small bowl. Add oregano, garlic powder, and a pinch of salt. Whisk them together until the mixture is well blended.
- In your nonstick skillet, melt ½ tablespoon of butter over medium heat. Toss in the baby spinach and sauté it for 1-2 minutes until it wilts.
- Melt the remaining butter in the skillet. Pour the egg mixture and cook undisturbed for 1-2 minutes.
- Sprinkle the sautéed spinach and feta cheese over one side of the omelet. Cook for another minute.
- Fold the omelet in half using a spatula and serve warm.
