Ingredients

  • 2 or 3 Eggs (depending on desired thickness)
  • Butter (or substitute with olive oil)
  • Fresh Baby Spinach (or frozen, heated and drained)
  • Feta Cheese
  • Oregano
  • Garlic Powder
  • Salt (to taste)

Instructions

  1. Start by cracking the eggs into a small bowl. Add oregano, garlic powder, and a pinch of salt. Whisk them together until the mixture is well blended.
  2. In your nonstick skillet, melt ½ tablespoon of butter over medium heat. Toss in the baby spinach and sauté it for 1-2 minutes until it wilts.
  3. Melt the remaining butter in the skillet. Pour the egg mixture and cook undisturbed for 1-2 minutes.
  4. Sprinkle the sautéed spinach and feta cheese over one side of the omelet. Cook for another minute.
  5. Fold the omelet in half using a spatula and serve warm.
