Description
This 30-Minute Chicken Fried Rice Blackstone is a quick, satisfying meal that packs a punch of flavor.
Ingredients
Scale
- 2 cups cooked and chilled jasmine or long-grain rice
- 2 boneless, skinless chicken breasts, diced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil or avocado oil
- 2 large eggs, lightly beaten
- 1 cup frozen mixed vegetables (peas, diced carrots, corn)
- 2 cloves garlic, minced
- 2 green onions, sliced (white and green parts separated)
- 1 teaspoon freshly grated ginger
- Salt and pepper to taste
Instructions
- Start by heating your Blackstone griddle to medium-high heat, ensuring it reaches a uniform temperature for optimal cooking.
- Add vegetable or avocado oil to the griddle, letting it heat up briefly before introducing the diced chicken. Season the chicken with salt and pepper before cooking until browned.
- On a clean section of the griddle, add the beaten eggs and scramble.
- Add minced garlic and the white parts of the green onions, then the mixed vegetables. Sauté until tender.
- Introduce the cold rice to the mix, spreading it out and gently breaking up clumps.
- Add cooked chicken and scrambled eggs back, then pour in soy sauce, sesame oil, and oyster sauce. Stir-fry until well-coated.
- Garnish with green onion tops and serve hot.
Notes
Use day-old rice for the best results; it dries slightly, helping it crisp on the griddle.
