  • 16 oz. rotini pasta
  • 4 cups spaghetti sauce
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • 16 oz. shredded mozzarella
  • Vegetable oil for frying
  • Fresh parsley for garnish

Instructions

  1. Begin by cooking the rotini pasta according to package instructions, but stop one minute before it reaches the al dente stage.
  2. Prepare the chicken for frying by slicing the boneless, skinless chicken breasts in half lengthwise.
  3. Heat vegetable oil in a large sauté pan and fry the breaded chicken cutlets until golden brown.
  4. In a baking dish, combine the cooked pasta, spaghetti sauce, half a cup of Parmesan cheese, and some shredded mozzarella cheese.
  5. Pop the casserole in your preheated oven at 350°F for about 5-7 minutes.
