- 1 large sweet potato, peeled and grated
- 2 large eggs, beaten
- 1 cup breadcrumbs (or gluten-free breadcrumbs)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- Olive oil spray, for coating
Instructions
- Preheat the Air Fryer to 400°F (200°C) for approximately 5 minutes.
- In a large mixing bowl, combine grated sweet potato, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper. In a separate bowl, beat the eggs until blended and frothy.
- Dip each piece of chicken into the beaten eggs, then coat with the sweet potato breadcrumb mixture.
- Lightly spray the air fryer basket with olive oil. Arrange the chicken nuggets in a single layer and air fry at 400°F (200°C) for about 8 to 10 minutes, flipping halfway through.
- Serve immediately with your favorite dipping sauces.
