Ingredients
Scale
- 1 tbsp olive oil
- 1 lb ground Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups water
- 8 oz lasagna noodles, broken into pieces
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt, to taste
- Black pepper, to taste
- 2 cups fresh spinach
- 1 cup ricotta cheese
- Chopped parsley, for garnish
Instructions
- Begin by heating the olive oil in a large pot over medium heat. Once it’s warmed, add the Italian sausage, breaking it apart with a spoon as it browns.
- Add the chopped onion and minced garlic to the browned sausage, letting them mingle until the onion softens and becomes translucent.
- Pour in the chicken broth and water, stirring gently to combine. Bring this mixture to a simmer.
- Introduce the broken lasagna noodles into the simmering pot. Cook them until they’re al dente, around 10 minutes.
- Reduce the heat and stir in the heavy cream and grated Parmesan cheese. Sprinkle in the Italian seasoning and season with salt and pepper to taste.
- Add the fresh spinach, allowing it to gently wilt into the soup’s embrace.
- Ladle the hot soup into bowls, topping each with a generous spoonful of ricotta cheese. Finish with a sprinkle of parsley for garnish.
