  • 4 large yellow onions, sliced into ¼-inch rounds
  • Olive oil, for drizzling
  • ½ tsp fresh thyme, chopped
  • Salt & pepper, to taste
  • 1 cup heavy cream
  • 2 tsp Dijon mustard
  • ½ cup Asiago cheese, grated

Instructions

  1. Begin by preheating your oven to 450°F (230°C). Grease a baking dish and carefully lay the onion slices flat in a single layer. Drizzle them generously with olive oil, ensuring each slice is well coated. Sprinkle fresh thyme, salt, and pepper over the top, then roast in the oven for 20 minutes.
  2. While the onions are roasting, focus on the sauce. In a medium saucepan, gently heat the cream over medium heat until it begins to simmer. Whisk in the Dijon mustard, then stir in half of the grated Asiago cheese until melted.
  3. Once the onions are roasted, pour the creamy sauce evenly over them. Sprinkle the remaining Asiago cheese atop and bake for another 20 minutes, covered with foil.

Notes

Avoid boiling the cream to prevent separation. Adjust seasoning of cream sauce after tasting.
