Instructions

  1. Begin by preheating your oven to 350°F (175°C). While the oven is heating, grab your oven-safe ramekins or small bowls and lightly grease them with butter or oil to prevent sticking. This step is crucial as it will ensure that your baked breakfast bowls release easily once they are ready to serve. Once greased, set them aside for filling.
  2. Next, in a blender or food processor, combine the cottage cheese, egg, oats or almond flour, vanilla extract, maple syrup or honey (if using), ground cinnamon, and a pinch of sea salt. Blend these ingredients until they form a smooth, creamy mixture. The blending process not only incorporates your ingredients but also aerates them, giving your breakfast bowls a light texture. If you are blending oats, ensure they’ve broken down adequately for a smooth mix.
  3. Once you have your base blended, it is time to gently fold in the blueberries.
