- 2 lbs large shrimp, peeled & deveined
- 2 Tbsp olive oil
- 1 Tbsp Cajun seasoning
- 1 tsp sweet paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried thyme
- ½ tsp dried oregano
- ¼ tsp cayenne pepper (adjust to taste)
- ¼ tsp red pepper flakes
- Juice of 1 lemon
- Salt & black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
- Tin foil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the peeled and deveined shrimp with the olive oil and all the seasonings: Cajun seasoning, sweet paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, and red pepper flakes. Toss the shrimp thoroughly.
- Tear off a large piece of tin foil, place the seasoned shrimp in the center, drizzle with lemon juice, season with salt and pepper, and fold the foil over, sealing tightly.
- Transfer the foil packet onto a baking tray and slide into the preheated oven. Bake for 15–20 minutes.
- Open the packet carefully, sprinkle with parsley, serve immediately with lemon wedges.
