- 4 boneless, skinless chicken breasts
- 1 cup barbecue sauce
- 1 cup pineapple chunks (fresh or canned, drained)
- 1/4 cup pineapple juice
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- 1 cup shredded mozzarella or cheddar cheese (optional)
- Chopped fresh cilantro or green onions for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C) and grease your baking dish.
- Season chicken breasts on both sides with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Mix barbecue sauce with pineapple juice in a bowl and pour over chicken.
- Scatter pineapple chunks over the chicken and cover with foil.
- Bake for 25–30 minutes, then uncover and add cheese if desired, baking for an additional 5 minutes.
- Let rest for 5 minutes, then garnish and serve.
Notes
For best results, use an instant-read thermometer to ensure chicken is cooked to an internal temperature of 165°F (74°C). Allow leftovers to cool before storing.
