This Baklava Pistachio Cheesecake Supreme combines the rich, creamy textures of cheesecake with the delightful, flaky layers of baklava.

- 2 cups finely chopped pistachios
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 tbsp honey
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup Greek yogurt or sour cream
- 3 large eggs
- 1 tsp pure vanilla extract
- 1/4 tsp salt
- 1 tsp lemon zest
- 1 cup finely chopped phyllo pastry
- 1/2 cup honey for drizzle
- 1/4 cup crushed pistachios for topping
- Extra drizzle of honey for serving
- Pinch of cinnamon
Instructions
- Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a mixing bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of honey. Press into the prepared springform pan.
- In another bowl, beat cream cheese and sugar until smooth. Add yogurt, eggs, vanilla, salt, and lemon zest; mix until incorporated.
- Pour half the batter into the crust. Sprinkle with half the pistachios and phyllo. Pour remaining batter and smooth the top.
- Bake for 50-60 minutes until set. Cool to room temperature.
- Chill in the refrigerator for at least 4 hours. Drizzle with honey and top with crushed pistachios before serving.

This cheesecake actually benefits from being made a day in advance; it allows flavors to meld beautifully.
