Description

This Baklava Pistachio Cheesecake Supreme combines the rich, creamy textures of cheesecake with the delightful, flaky layers of baklava.


Ingredients

  • 2 cups finely chopped pistachios
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 tbsp honey
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup Greek yogurt or sour cream
  • 3 large eggs
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt
  • 1 tsp lemon zest
  • 1 cup finely chopped phyllo pastry
  • 1/2 cup honey for drizzle
  • 1/4 cup crushed pistachios for topping
  • Extra drizzle of honey for serving
  • Pinch of cinnamon

Instructions

  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of honey. Press into the prepared springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add yogurt, eggs, vanilla, salt, and lemon zest; mix until incorporated.
  4. Pour half the batter into the crust. Sprinkle with half the pistachios and phyllo. Pour remaining batter and smooth the top.
  5. Bake for 50-60 minutes until set. Cool to room temperature.
  6. Chill in the refrigerator for at least 4 hours. Drizzle with honey and top with crushed pistachios before serving.

Notes

This cheesecake actually benefits from being made a day in advance; it allows flavors to meld beautifully.
