Indulge in a delightfully chocolate-filled puff treat that combines the nostalgia of banana pudding with a rich chocolate coating.

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 tsp salt
- 4 large eggs
- 2 cups milk
- 1/2 cup sugar
- 1/3 cup cornstarch
- 1/4 tsp salt
- 2 large egg yolks
- 2 tbsp butter
- 1 tsp vanilla extract
- 1 ripe banana, mashed
- 8 oz semi-sweet chocolate (or chocolate chips)
- 1 tbsp coconut oil (optional, for a smoother coating)
Instructions
- Preheat oven to 400°F (200°C), line a baking sheet with parchment. In a saucepan, bring water and butter to a boil, remove from heat, stir in flour and salt until a dough forms. Let cool, add eggs one at a time.
- Dollop mounds onto baking sheet, bake for 20-25 minutes until golden. Cool completely.
- In a saucepan, whisk milk, sugar, cornstarch, and salt over medium heat until thick. Beat egg yolks separately, temper with pudding mix, return to pot and cook for 2-3 minutes. Stir in butter, vanilla, and banana. Cool.
- Fill puffs with banana pudding. Melt chocolate and coconut oil, dip each puff in, and place on parchment to set.
Notes
For the best texture, fill the puffs just before serving.
