  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1 1/2 cups shredded sharp cheddar cheese (divided)
  • 1/2 cup BBQ sauce for glazing
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard

Instructions

  1. Begin by preheating your oven to 375°F (190°C). Line a baking sheet with aluminum foil for easy cleanup, or lightly grease a loaf pan if you prefer that method. This step ensures that the meatloaf doesn’t stick and makes it easier to slice once baked.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, milk, diced onion, minced garlic, Worcestershire sauce, BBQ sauce, salt, black pepper, smoked paprika, and 1 cup of the shredded cheddar cheese. Use your hands or a sturdy spatula to gently mix the ingredients until just combined — overmixing can lead to a dense meatloaf, and we want it to remain tender and juicy.
  3. Once the mixture is well combined, transfer it to your prepared baking sheet or pour it into your greased loaf pan. If using a baking sheet, shape the meat mixture into a loaf form, about 2 inches high. This ensures it cooks evenly and allows for that beautiful crust to form.
  4. In a small bowl, whisk together the glaze ingredients: the remaining BBQ sauce, brown sugar, and Dijon mustard. The sweetness from the brown sugar pairs magically with the tangy BBQ, resulting in a wonderful flavor balance.
  5. Brush or spoon half of this glaze mixture over the shaped meatloaf generously, coating it evenly. This step not only adds flavor but also creates a luscious crust as it bakes.
