  • 1 large bag tortilla chips
  • 1½ cups shredded cheddar cheese
  • 1 cup Monterey Jack or mozzarella cheese
  • 1 can (10 oz) cream of chicken soup
  • 1 can Rotel tomatoes (mild or spicy, drained slightly)
  • 1 can black beans (optional, drained and rinsed)
  • ½ cup sour cream or Greek yogurt
  • 1 tablespoon taco seasoning
  • Salt and pepper, to taste
  • Optional toppings: diced avocado, sliced jalapeños, pico de gallo, chopped cilantro, black olives, salsa or guacamole, lime wedges

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, drained Rotel tomatoes, and either sour cream or Greek yogurt. Sprinkle in the taco seasoning, then season with salt and pepper to taste. Stir everything together.
  3. Spread tortilla chips on a baking sheet.
  4. Spoon the creamy chicken mixture over the chips.
  5. Sprinkle shredded cheddar and Monterey Jack cheese over the top.
  6. Bake for 10-12 minutes until cheese is melted and bubbly.
