Description

Delightfully crispy coconut shrimp served with a tangy pineapple sauce!

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined, tails left on
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup shredded sweetened coconut
  • 1/2 cup panko breadcrumbs
  • 1/2 cup vegetable oil (for frying)
  • 1 cup pineapple juice
  • 1/2 cup crushed pineapple
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • 1 clove garlic, minced
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (slurry)

Instructions

  1. Begin by patting the shrimp dry with paper towels to remove excess moisture, which helps achieve a crispier texture when frying. In a mixing bowl, combine the flour, salt, and black pepper. This seasoned flour will enhance the flavor of the shrimp while providing a slight layer of protection during frying.
  2. Coat each shrimp lightly in the seasoned flour, ensuring an even dusting, followed by dipping them into the beaten eggs. This step helps the flour adhere well. Next, roll the shrimp in a mixture of shredded coconut and panko breadcrumbs, creating a deliciously crunchy coating.
  3. In a skillet, heat the vegetable oil over medium-high heat until shimmering. Carefully place the coated shrimp in the oil, making sure not to overcrowd the pan. Fry them in batches for about 2-3 minutes on each side, or until they turn golden brown and reach the desired crispiness.
  4. While the shrimp are frying, prepare the vibrant dipping sauce by combining the pineapple juice, crushed pineapple, rice vinegar, honey, soy sauce, grated ginger, and minced garlic in a saucepan. Bring this mixture to a gentle simmer, stirring occasionally, and add the cornstarch slurry to thicken.
  5. Once the shrimp are fried and the sauce is ready, serve the crispy coconut shrimp on a platter with the pineapple sauce in a bowl for dipping.

Notes

Ensure oil is at the right temperature before frying to achieve optimal crispiness. For a healthier version, bake the shrimp instead of frying.
