  • 1 small yellow onion, diced
  • 15 oz can black beans, drained and rinsed
  • 15 oz can kidney beans, drained and rinsed
  • 15 oz can corn, drained
  • 15 oz can diced tomatoes
  • 10 oz can diced tomatoes with green chilies
  • 8 oz can tomato sauce
  • 1 packet taco seasoning or 2 tbsp homemade mix
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder (optional)
  • 2 cups beef broth or water
  • Salt and pepper, to taste

Instructions

  1. Start by heating a large skillet over medium heat. Add the ground beef and diced yellow onion, cooking them together until the beef is browned and the onions are soft. This usually takes about 6–8 minutes. Be sure to drain any excess grease, which will help keep the soup from becoming too greasy.
  2. Once the beef and onions have cooked, transfer them directly into your prepared crockpot. This sets the foundation of your hearty soup.
  3. Next, add the black beans, kidney beans, corn, diced tomatoes, Rotel, and tomato sauce into the crockpot. Each of these ingredients brings something unique to the table, creating layers of texture and flavor.
  4. Sprinkle in your taco seasoning, ground cumin, smoked paprika, and chili powder if you wish. Don’t forget to gently season with salt and pepper, keeping in mind that the seasoning can be adjusted as you taste the soup later.
