Ingredients
Scale
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups beef broth
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can corn, drained
- 1 (14.5 oz) can green beans, drained
- 2 medium carrots, sliced
- 3 medium potatoes, peeled and diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 1 bay leaf
- 1 1/2 cups water
- 1 cup frozen peas (optional)
- Fresh parsley or green onions for garnish (optional)
Instructions
- Using your large soup pot or Dutch oven, heat it over medium heat. Once it’s warm, add the ground beef and begin cooking. Make sure to break up the meat using a wooden spoon so that it browns evenly. This step is crucial, as the flavor of caramelized beef adds depth to your soup. If there’s excess fat after browning, feel free to drain some off.
- Next, stir in the diced onion and allow it to cook with the beef for about 3-4 minutes. This will soften the onions and help them release their natural sweetness. Add the minced garlic and sauté for another 30 seconds until fragrant. Garlic brings an irresistible aroma and additional flavor to your soup, elevating its overall taste.
- Pour in the beef broth along with the water and can of diced tomatoes (don’t forget the juice!). Season this mixture with salt, pepper, paprika, thyme, oregano, and a bay leaf. Stir everything together to ensure the seasonings are evenly distributed. These ingredients form the flavorful base of the soup that will simmer together beautifully.
- Now, it’s time to bring in the colorful veggies! Add the diced potatoes, sliced carrots, drained corn, and green beans to the pot. Stir to combine, then bring the soup to a gentle boil over medium-high heat. The veggies will add texture and nutritious benefits to your hearty dish.
- Once boiling, reduce the heat to low and cover the pot. Let it simmer for 25-30 minutes, stirring occasionally, until all the vegetables are perfectly tender. This step allows the flavors to meld beautifully, creating a rich and hearty soup that will comfort your soul.
- After the simmering time is complete, remove the bay leaf and stir in the optional frozen peas. Cook for another 5 minutes, just long enough to warm the peas through. When you’re ready to serve, taste the soup and adjust the seasoning if necessary. Some might prefer a bit more salt or pepper according to their taste.
- Garnish each bowl with freshly chopped parsley or sliced green onions if desired. Serve the soup hot and enjoy the wonderful flavor and texture!
