  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract (for frosting)
  • 23 tablespoons heavy cream
  • Extra rainbow sprinkles for decorating

Instructions

  1. Begin by preheating your oven to 350°F (175°C). While it’s heating up, take your three 8-inch round cake pans and grease them thoroughly with unsalted butter. Then, line the bottom of each pan with parchment paper to ensure easy removal post-baking.
  2. In a medium-sized mixing bowl, sift together the gluten-free all-purpose flour, baking powder, baking soda, and salt. Whisk these ingredients until well combined.
  3. In a large mixing bowl, beat the softened unsalted butter along with granulated sugar using a hand mixer or stand mixer until it becomes light and fluffy.
  4. Add the room temperature eggs one at a time, mixing thoroughly after each addition. Next, stir in the pure vanilla extract.
  5. Gradually incorporate the dry ingredient mixture into your butter-sugar-egg mixture, alternating with buttermilk. Start and end with the flour mixture, mixing until just combined.
  6. Gently fold in the gluten-free rainbow sprinkles with a spatula.
  7. Divide the mixture evenly among the prepared cake pans and place them in the preheated oven. Bake for 22-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Once baked, let the cakes cool in their pans for about 10 minutes.
  9. For the frosting, in a clean mixing bowl, beat the softened butter until it turns creamy. Gradually add powered sugar, pouring in the vanilla extract and heavy cream for moisture.
  10. Once your cake layers are completely cool, place the first layer on a serving plate and generously spread a layer of frosting on top. Repeat with the second layer and finally, cover the entire cake with the remaining frosting, garnishing with extra rainbow sprinkles.
