Ingredients

Scale
  • 1 can (28 oz) whole tomatoes with juice
  • 2 cans (10 oz each) Rotel diced tomatoes and green chilies
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 whole jalapeño pepper, quartered and thinly sliced
  • 1/4 teaspoon granulated sugar
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground cumin
  • 1/2 cup freshly chopped cilantro
  • Juice of 1/2 fresh lime

Instructions

  1. Start by opening the can of whole tomatoes, and pour them along with their juice into a large mixing bowl. Next, add the two cans of Rotel diced tomatoes and green chilies to the mixture.
  2. Chop the onion finely and mince the garlic before adding them to your bowl. Then, take your prepared jalapeño pepper and add it to the mix.
  3. Now it’s time to season your salsa. Sprinkle in the granulated sugar, sea salt, and ground cumin.
  4. Gently fold in the chopped cilantro and squeeze in the fresh lime juice, mixing everything together well.
  5. Allow your salsa to rest for at least 30 minutes before serving.

Notes

Always wash your vegetables thoroughly and consider blending in a food processor for a smoother texture.
