  2. Next, gradually pour in the cold water while whisking the mixture gently. The trick is to incorporate the water slowly, creating a smooth batter without lumps. Add an egg at this stage, let the batter rest for 5 minutes.
  3. Heat the oil in a deep fryer or heavy pot over medium-high heat. Use a thermometer to monitor the temperature at 350°F (175°C).
  4. While the oil heats, pat your fish fillets or chicken tenders dry thoroughly.
  5. Dip each piece of fish or chicken into the batter and gently place into the hot oil. Fry in batches for about 4-5 minutes, flipping them halfway through cooking.
