Instructions
- In a large mixing bowl, start by whisking together all the dry ingredients. Combine the all-purpose flour, corn starch, baking soda, baking powder, sugar, salt, onion powder, garlic powder, and white pepper until thoroughly mixed.
- Next, gradually pour in the cold water while whisking the mixture gently. The trick is to incorporate the water slowly, creating a smooth batter without lumps. Add an egg at this stage, let the batter rest for 5 minutes.
- Heat the oil in a deep fryer or heavy pot over medium-high heat. Use a thermometer to monitor the temperature at 350°F (175°C).
- While the oil heats, pat your fish fillets or chicken tenders dry thoroughly.
- Dip each piece of fish or chicken into the batter and gently place into the hot oil. Fry in batches for about 4-5 minutes, flipping them halfway through cooking.
- Once the pieces turn golden brown and crispy, remove them gently using a slotted spoon. Let them drain on a rack lined with paper towels.
