  • 1 rack of baby back ribs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon paprika
  • 1 tablespoon brown sugar
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground chipotle pepper
  • 1/2 cup apple cider vinegar
  • 1 cup barbecue sauce

Instructions

  1. Begin by preheating your oven to 300°F (150°C). Remove the silver skin from the back of the ribs using a sharp knife.
  2. Pat the ribs dry with paper towels. In a bowl, combine olive oil, salt, pepper, paprika, brown sugar, garlic powder, onion powder, cumin, and chipotle pepper to form a rub. Coat the ribs thoroughly.
  3. Place the seasoned ribs onto a lined baking sheet and cover with aluminum foil. Bake for 2.5 to 3 hours until fork-tender.
  4. As the ribs bake, combine apple cider vinegar and barbecue sauce in a saucepan. Simmer over medium heat until slightly thickened.
  5. Prepare your grill by preheating to medium-high. Brush ribs with chipotle barbecue sauce and grill for 5-7 minutes per side.
  6. Remove from grill, rest for 5 minutes, then slice and serve.

Notes

For extra smokiness, add wood chips to your grill.
