- 1 ½ lbs fresh strawberries, hulled and halved
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- ½ cup water
- 1 tablespoon lemon juice (freshly squeezed for best results)
- Whipped cream (optional, for garnish)
Instructions
- Start by placing half of the hulled and halved fresh strawberries in your pre-baked pie crust. Spread them evenly, ensuring each bite will be filled with juicy strawberry goodness.
- In a medium saucepan set over medium heat, combine the remaining fresh strawberries, sugar, cornstarch, water, and freshly squeezed lemon juice. Using a masher or spoon, gently crush the berries to release their natural juices while mixing the ingredients. Continuously stir the mixture to prevent it from clumping, and watch closely as it comes to a boil. Keep cooking until the mixture transforms into a thick, luscious glaze, which should take around 3 to 5 minutes.
- Once your glaze has thickened, remove it from the heat and allow it to cool for about 5 minutes. Carefully pour the warm glaze over the layer of strawberries in the pie crust, making sure it evenly coats all the berries.
- Place the assembled pie in the refrigerator and allow it to chill for at least 4 hours to achieve the perfect texture.
- When you’re ready to impress your guests, take the pie out of the refrigerator and crown the top with a dollop of whipped cream or additional fresh strawberries.
