- Mix cornstarch with water in a small bowl to form a slurry.
- Pour the slurry into the saucepan, stirring continuously for another 3-5 minutes until thickened.
- Remove from heat and stir in vanilla extract.
- Allow topping to cool before serving over cheesecake.
