- 1 lb small cremini or button mushrooms (about 450 g)
- 1 tbsp butter
- 1/2 small yellow onion, minced
- Leaves from 1 small thyme sprig, chopped
- Freshly cracked black pepper, to taste
- 5.2 oz garlic & herb Boursin cheese, softened (150 g)
- 1/4 cup panko crumbs (15 g)
- 2 tbsp fresh parmesan, finely grated (10 g)
- 1 tbsp fresh parsley, chopped
- 1 tbsp olive oil
Instructions
- Begin by preheating your oven to 350°F (175°C). While your oven is warming up, carefully remove the stems from the mushrooms. Mince these stems finely as they’ll be incorporated into the savory filling.
- In a medium-sized skillet over medium heat, melt the butter. Add the minced mushroom stems, onion, and chopped thyme leaves. Cook this mixture for 5 to 7 minutes, allowing the onions to become translucent and the stems to take on a golden hue. Season with freshly cracked black pepper to taste. Once cooked, set aside the mixture to cool slightly.
- In a small bowl, mix together the panko breadcrumbs, grated parmesan, and chopped parsley. This mixture will later create the crunchy topping for your mushrooms.
- In a separate bowl, fold the softened Boursin cheese with the cooled onion and mushroom mixture. Incorporate half of the panko mix into this, ensuring a well-blended and flavorful filling.
- Drizzle olive oil over the mushroom caps, then carefully fill each with the creamy Boursin mixture. Press the top of each filled cap into the remaining panko mixture to coat. Arrange the stuffed mushrooms on a parchment-lined baking sheet and bake for about 20 minutes until the mushrooms are tender and the tops golden and bubbling. For an additional golden finish, switch to broil for the last 1 to 2 minutes.
Notes
Mushrooms can be prepped a day in advance and baked just before serving to save time.
