  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 small red onion, finely chopped
  • 1 clove garlic, minced
  • 1/2 red bell pepper, diced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 4 large flour tortillas
  • 3.5 ounces shredded cheddar or Monterey Jack cheese
  • 1 large ripe avocado, sliced
  • 3.5 ounces shredded lettuce
  • 2 medium tomatoes, diced
  • 4 tablespoons sour cream
  • Fresh cilantro, chopped (optional)
  • Lime wedges, for serving

Instructions

  1. Begin your culinary adventure by marinating the bite-sized pieces of chicken. In a mixing bowl, combine the chicken with olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix thoroughly to ensure each piece is coated with the flavorful spices. Let the chicken marinate for at least 10 minutes; this step allows the spices to penetrate the meat, enhancing the overall flavor.
  2. After marinating, heat a large skillet over medium-high heat. Add your seasoned chicken to the hot skillet and cook for about 5 to 7 minutes. Keep an eye on the chicken as it cooks, stirring occasionally until it’s nicely browned and fully cooked through. Once done, transfer the chicken to a plate and set aside for later.
  3. Using the same skillet, add an additional tablespoon of olive oil. Sauté your chopped red onion and minced garlic for about 2 minutes until they become fragrant. Then, add the diced red bell pepper, along with ground cumin and chili powder, cooking for another 3 to 4 minutes, stirring frequently. Allow the vegetables to soften but retain their vibrant colors and shapes.
  4. Next, stir in the drained black beans with the sautéed vegetables. Sprinkle with salt and black pepper to taste, and heat the mixture for an additional 2 to 3 minutes. This heating step ensures that everything is warm and flavors meld together beautifully. When everything is heated through, remove from heat and prepare to assemble your burritos.
  5. Now it’s time to prepare your tortillas for wrapping! If using a dry skillet, heat each tortilla individually over medium heat for a few seconds on each side until they become warm and pliable. Alternatively, you can microwave them for a short time. Make sure not to overheat or they’ll become stiff.
  6. To assemble your burritos, take one warmed tortilla and layer a quarter of the black bean mixture, followed by cooked Cajun chicken, a sprinkle of shredded cheese, slices of avocado, a handful of shredded lettuce, and diced tomatoes. Finish off with a spoonful of sour cream, and if desired, a sprinkle of fresh cilantro to add a pop of freshness. Fold the sides of the tortilla inward and carefully roll it up tightly.
