- 1 tbsp chopped toasted walnuts or pistachios (optional)

- Citrus Honey Drip:
- 2 tbsp honey
- 1 tbsp orange juice
- 1/2 tsp orange zest
- Pinch of sea salt
Instructions
- Begin by preheating your oven to 400°F (200°C). While it is heating, line a baking sheet with parchment paper. This step is crucial as it saves you from messy clean-up later on.
- Slice the pears and cooked beets into even ¼-inch rounds. Aim for uniform thickness to ensure even cooking. If your slices are inconsistent, some may overcook while others remain crunchy.
- In a large mixing bowl, combine the pear and beet slices with olive oil, honey, sea salt, and black pepper. This tasty coating will enhance the flavors while caramelizing beautifully. Make sure each slice is evenly coated for maximum flavor.
- Spread the coated slices in a single layer on the prepared baking sheet. Roast in the oven for 12–15 minutes, flipping them halfway through. This roasting process brings out the natural sweetness of the fruits, creating that desirable caramelized effect.
- While the pear and beet slices are roasting, prepare the citrus honey drip. In a small pan over low heat, combine honey, orange juice, orange zest, and a pinch of sea salt. - Once the roasted slices are finished, remove them from the oven and allow them to cool slightly. This prevents any burns during assembly and allows flavors to set as they cool.
