  • 2 large heads bok choy (about 1.5 lb), halved lengthwise
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 5 garlic cloves, thinly sliced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika (optional)
  • ½ cup crumbled feta cheese
  • ⅓ cup chopped toasted walnuts

Instructions

  1. Begin by heating the olive oil and butter in a large skillet over medium-high heat.
  2. Once your skillet is hot, carefully place the bok choy cut-side down into the skillet.
  3. After achieving that perfect caramelization, flip the bok choy and cook for an additional 2–3 minutes.
  4. Lower the heat to medium, then add the sliced garlic along with salt, black pepper, and optional smoked paprika.
  5. In a small separate pan, warm the honey with crushed chili flakes and apple cider vinegar for about 2–3 minutes.
  6. Transfer the beautifully caramelized bok choy to a serving dish and sprinkle the crumbled feta cheese and toasted walnuts generously on top.
