- ½ cup granulated sugar
- 1 tablespoon vanilla extract

- 1 egg yolk
- 2 cups chocolate chips
- For the Cheesecake Filling:
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (165°C).
- In a medium mixing bowl, whisk together the all-purpose flour, baking soda, and salt. In a larger bowl, cream together the melted unsalted butter, brown sugar, and granulated sugar until smooth and fluffy. Add the vanilla extract, egg, and egg yolk, beating until light and creamy. Gradually mix in the dry ingredients until just combined. Fold in the chocolate chips.
- In a small bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Beat until smooth and creamy.
- Take a ball of cookie dough, flatten it, and place a teaspoon of cheesecake filling in the center. Wrap the dough around the filling and seal well.
- Arrange cookies on lined baking sheets, spacing apart. Bake for 15–18 minutes until edges are golden brown. Cool for 5 minutes before transferring to a wire rack.
Notes
For softer cookies, slightly underbake and let them rest on the baking sheet.
