  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 12 ounces rotini pasta
  • 2 tablespoons butter
  • 2 cloves garlic, finely minced
  • 1 ½ cups heavy cream
  • 1 cup grated Parmesan cheese
  • ½ cup shredded mozzarella
  • ½ teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley or basil, chopped
  • Extra Parmesan cheese

Instructions

  1. Begin by cutting the chicken breasts into bite-sized cubes. In a mixing bowl, toss the chicken with garlic powder, smoked paprika, Italian seasoning, salt, and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the seasoned chicken cubes to the pan and cook for about 4–5 minutes on each side until golden brown.
  3. Add 2 tablespoons of unsalted butter and minced garlic to the skillet. Stir to combine and let the garlic infuse into the butter for about one minute.
  4. In a large pot, bring salted water to a rapid boil. Add the rotini and cook according to package instructions until al dente. Reserve half a cup of pasta water, then drain.
  5. In a separate saucepan, melt 2 tablespoons of butter over medium heat and sauté the minced garlic. Slowly pour in the heavy cream, stirring gently to avoid curdling.
  6. Once simmering, gradually add the grated Parmesan and mozzarella, stirring continuously until melted. Season with Italian seasoning, salt, and black pepper.
  7. Add the cooked rotini to the Alfredo sauce, gently tossing to coat. If too thick, add reserved pasta water until desired consistency is achieved.
  8. Plate the creamy pasta and top with garlic butter chicken, garnishing with fresh parsley and Parmesan cheese. Serve hot.

Notes

For best results, do not overcook the pasta; it should remain al dente.
