- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 12 ounces rotini pasta
- 2 tablespoons butter
- 2 cloves garlic, finely minced
- 1 ½ cups heavy cream
- 1 cup grated Parmesan cheese
- ½ cup shredded mozzarella
- ½ teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh parsley or basil, chopped

Instructions
- Begin by cutting the chicken breasts into bite-sized cubes. In a mixing bowl, toss the chicken with garlic powder, smoked paprika, Italian seasoning, salt, and black pepper.
- Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the seasoned chicken cubes to the pan and cook for about 4–5 minutes on each side until golden brown.
- Add 2 tablespoons of unsalted butter and minced garlic to the skillet. Stir to combine and let the garlic infuse into the butter for about one minute.
- In a large pot, bring salted water to a rapid boil. Add the rotini and cook according to package instructions until al dente. Reserve half a cup of pasta water, then drain.
- In a separate saucepan, melt 2 tablespoons of butter over medium heat and sauté the minced garlic. Slowly pour in the heavy cream, stirring gently to avoid curdling.
- Once simmering, gradually add the grated Parmesan and mozzarella, stirring continuously until melted. Season with Italian seasoning, salt, and black pepper.
- Add the cooked rotini to the Alfredo sauce, gently tossing to coat. If too thick, add reserved pasta water until desired consistency is achieved.
- Plate the creamy pasta and top with garlic butter chicken, garnishing with fresh parsley and Parmesan cheese. Serve hot.
Notes
For best results, do not overcook the pasta; it should remain al dente.
