- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach (roughly chopped)
- 2 cups mushrooms, sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C) and season chicken with salt, pepper, and Italian seasoning.
- Sear the seasoned chicken breasts in olive oil over medium-high heat for 3-4 minutes on each side.
- Sauté mushrooms in the same skillet until browned, add garlic and spinach and cook until wilted.
- Pour in chicken broth and heavy cream, stirring to create a creamy base.
- Transfer chicken to a baking dish, pour the creamy mixture over, and top with mozzarella and Parmesan cheese.
- Bake for 20-25 minutes until chicken is cooked through and cheese is golden brown.
