Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach (roughly chopped)
  • 2 cups mushrooms, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and season chicken with salt, pepper, and Italian seasoning.
  2. Sear the seasoned chicken breasts in olive oil over medium-high heat for 3-4 minutes on each side.
  3. Sauté mushrooms in the same skillet until browned, add garlic and spinach and cook until wilted.
  4. Pour in chicken broth and heavy cream, stirring to create a creamy base.
  5. Transfer chicken to a baking dish, pour the creamy mixture over, and top with mozzarella and Parmesan cheese.
  6. Bake for 20-25 minutes until chicken is cooked through and cheese is golden brown.
