- 1 pound ground beef
- 4 cups thinly sliced Yukon Gold or Russet potatoes
- 2 cups shredded cheddar cheese
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of cheddar soup (or cream of mushroom)
- 1 cup whole milk
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika (optional)
- 2 tablespoons chopped parsley or chives (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Wash and slice the potatoes into ⅛-inch thick rounds.
- In a skillet, cook the ground beef with onion and garlic until browned; season with salt, pepper, and paprika. Drain any excess fat.
- Mix the cream of cheddar soup with milk until smooth.
- Layer half of the potatoes in the baking dish, followed by half of the beef, half of the soup mixture, and half of the cheese. Repeat the layers.
- Cover with foil and bake for 45 minutes, then remove foil and bake for an additional 20-25 minutes until golden.
- Let rest for 10 minutes before serving, garnished with parsley or chives.
Notes
This casserole can be made ahead and refrigerated or frozen for later use.
