  • 4 cups thinly sliced Yukon Gold or Russet potatoes
  • 2 cups shredded cheddar cheese
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of cheddar soup (or cream of mushroom)
  • 1 cup whole milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • 2 tablespoons chopped parsley or chives (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Wash and slice the potatoes into ⅛-inch thick rounds.
  3. In a skillet, cook the ground beef with onion and garlic until browned; season with salt, pepper, and paprika. Drain any excess fat.
  4. Mix the cream of cheddar soup with milk until smooth.
  5. Layer half of the potatoes in the baking dish, followed by half of the beef, half of the soup mixture, and half of the cheese. Repeat the layers.
  6. Cover with foil and bake for 45 minutes, then remove foil and bake for an additional 20-25 minutes until golden.
  7. Let rest for 10 minutes before serving, garnished with parsley or chives.
