  • ¼ cup milk
  • 2 green onions, finely chopped
  • ½ tsp garlic powder
  • ½ tsp smoked paprika (optional)
  • Salt and black pepper, to taste

Instructions

  1. Start by preheating your oven to 400°F (200°C) to ensure it reaches the right temperature for baking.
  2. In a large mixing bowl, combine your mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, eggs, milk, finely chopped green onions, garlic powder, smoked paprika, salt, and black pepper. Use a spatula or wooden spoon to mix everything together until the ingredients are well-combined and the mixture appears smooth.
  3. Using a spoon, carefully scoop the potato mixture into each muffin cup, filling them about ¾ full.
  4. Place the muffin tin in the preheated oven and bake for 20 to 25 minutes, or until the tops turn a beautiful golden color and the mixture is set.
  5. Once baked, remove the muffin tin from the oven and let it cool for a few minutes.

Feel free to make the mixture ahead of time. Just store it in the refrigerator for up to 24 hours before baking.
