Description
This Cheesy Ranch Rotini Bake with Beef and Sweet Corn is a comforting and delicious dish perfect for the whole family.
Ingredients
Scale
- 12 ounces rotini pasta
- 1 pound ground beef
- 1 cup sweet corn (canned or frozen)
- 2 cups shredded cheddar cheese (divided)
- 4 ounces cream cheese
- 1 cup milk
- 1 packet ranch seasoning mix (about 1 ounce)
- 1 tablespoon butter (optional)
- Salt to taste
- Black pepper to taste
Instructions
- Start your cooking journey by preheating your oven to 375°F (190°C). While the oven warms, grab a 9×13-inch baking dish and give it a light greasing with your choice of oil or butter.
- Bring a large pot of salted water to a rolling boil. Add the rotini pasta, cooking it to al dente according to the package instructions—typically about 7-9 minutes.
- In a large skillet, heat over medium heat, adding the ground beef. Cook it until it’s browned all the way through, about 5-7 minutes.
- Using the same skillet, reduce the heat to medium-low and add cream cheese and milk. Stir until it transforms into a smooth and creamy sauce.
- In a large mixing bowl, combine the cooked rotini, browned ground beef, corn, and the cheese sauce.
- Pour the entire mixture into your prepared baking dish, spreading it out evenly. Sprinkle the remaining cheddar cheese on top.
- Once out of the oven, let the bake sit for about 5-10 minutes before serving.
Notes
For a creamier texture, add an extra splash of milk to the cheese sauce.
