A delightful stuffed baguette filled with cheesy spinach, artichokes, and mushrooms.

- 1 tablespoon olive oil
- 1 cup finely diced mushrooms
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1 bag (10 oz) baby spinach
- 8 oz cream cheese
- 1½ cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 3 green onions, sliced
- Salt and black pepper, to taste
- 1 baguette
- 3 tablespoons butter
- 3 garlic cloves, minced
- Grated Parmesan cheese
- Fresh basil or parsley, torn
Instructions
- To start, you’ll want to take your baguette and cut it into four equal sections. Use a serrated knife for a clean cut, making sure not to slice all the way through. You’re creating individual portions for stuffing. Once cut, gently hollow out the inside of each section, leaving a crust that can hold all the delicious filling.
- In a medium-sized skillet, heat the olive oil over medium heat. Add in the diced mushrooms and cook until they’ve released their moisture and turned golden brown, about 5 minutes. Then, add in the chopped artichokes and stir until well combined. Finally, toss in the baby spinach, stirring until it wilts down.
- Transfer the veggies to a mixing bowl. Add the cream cheese, mozzarella, cheddar, green onions, and a sprinkle of salt and pepper to taste. Use a spatula or spoon to mix everything together until smooth and creamy.
- Fill those hollowed baguette sections with your cheesy mixture. Use a spoon to fill each section generously. Slice them into 1-inch sections for easy serving.
- In a small saucepan, melt the butter over low heat and stir in the minced garlic. Brush this garlic-infused butter over the tops of each stuffed section. Wrap the filled baguette loosely in aluminum foil.
- Preheat your oven to 350°F (175°C). Place the wrapped baguette in the oven and bake for 15 minutes. Unwrap the foil and return the baguette to the oven for a final 5 minutes.
- Once the baguette is out of the oven, let it cool for a few moments before garnishing with grated Parmesan cheese and torn fresh herbs. Serve warm.
Notes
If you prefer a more decadent dish, use a blend of different cheeses like gouda or fontina.
