- 1 cup graham cracker crumbs
- 2 tbsp pistachios, finely chopped
- 2 tbsp sugar
- 4 tbsp melted butter
- 16 oz cream cheese, softened
- ½ cup sugar
- 2 large eggs
- ½ cup sour cream
- 1 tsp vanilla extract
- 2 tbsp flour
- ½ cup cherry preserves (or fresh pitted cherries)
- 2 tbsp chopped pistachios
Instructions
- Preheat the oven to 325°F and prepare a muffin tin with paper liners. Combine graham cracker crumbs, pistachios, sugar, and melted butter in a bowl. Press into muffin cups and pre-bake for 5 minutes.
- Beat softened cream cheese with sugar until smooth, then gradually add eggs, sour cream, vanilla extract, and flour.
- Divide filling among crusts and bake for 18–20 minutes until centers are set. Cool and refrigerate for at least 2 hours.
- Spoon cherry preserves over cheesecakes and sprinkle with pistachios before serving.
