Ingredients

  • 1 cup graham cracker crumbs
  • 2 tbsp pistachios, finely chopped
  • 2 tbsp sugar
  • 4 tbsp melted butter
  • 16 oz cream cheese, softened
  • ½ cup sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 2 tbsp flour
  • ½ cup cherry preserves (or fresh pitted cherries)
  • 2 tbsp chopped pistachios

Instructions

  1. Preheat the oven to 325°F and prepare a muffin tin with paper liners. Combine graham cracker crumbs, pistachios, sugar, and melted butter in a bowl. Press into muffin cups and pre-bake for 5 minutes.
  2. Beat softened cream cheese with sugar until smooth, then gradually add eggs, sour cream, vanilla extract, and flour.
  3. Divide filling among crusts and bake for 18–20 minutes until centers are set. Cool and refrigerate for at least 2 hours.
  4. Spoon cherry preserves over cheesecakes and sprinkle with pistachios before serving.
