  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • Optional: ⅛ teaspoon nutmeg (very subtle)

Instructions

  1. Start by preheating your oven to 350°F (175°C). Meanwhile, line your baking sheets with parchment paper.
  2. In a large mixing bowl, begin by adding the mashed banana along with the melted butter and brown sugar. Mix until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  4. Combine the dry ingredients into the bowl of wet ingredients, mixing gently until just combined.
  5. Chill the dough in the fridge for at least 20 to 30 minutes.
  6. Scoop the dough onto lined baking sheets, ensuring space between each scoop, and bake for 11 to 13 minutes.
  7. Allow to cool on the baking sheet for about 10 minutes before transferring to a wire rack.
