  • 1 cup crunchy panko crumbs
  • 1 egg, whisked for coating
  • ½ cup plain flour
  • ¼ cup creamy mayo
  • 2 tbsp tangy sweet chili sauce
  • 12 tbsp hot sriracha, based on heat preference
  • 1 tbsp tangy rice vinegar
  • Small slider rolls
  • Fresh lettuce, crisp pickles, and extra toppings if wanted

Instructions

  1. Start by cutting the chicken breast or tenders into smaller chunks that will fit neatly into your slider rolls. Ensure that each piece is seasoned well with salt and pepper to elevate the flavor of the chicken.
  2. To give your chicken that desirable crunch, set up a breading station. First, roll each seasoned piece of chicken in plain flour, making sure it’s entirely coated. Next, dunk the floured chicken into your whisked egg, allowing access liquid to drip off before moving on to the final step. Finally, coat each piece in crunchy panko crumbs, pressing slightly to ensure they adhere well.
  3. In your heated pan, pour a generous amount of oil to cover the bottom and warm it over medium heat. Once the oil is hot, carefully add the coated chicken pieces in a single layer, ensuring not to overcrowd the pan. Fry each side for about 3-4 minutes or until beautifully crispy and golden brown. After frying, transfer the chicken onto a plate lined with paper towels to absorb any excess oil.

  5. To bring your sliders together, start by placing fresh lettuce and a crispy pickle slice on the bottom half of each slider roll.
