- 6 thin-sliced chicken breasts
- 1 container (8 oz) green onion cream cheese
- 1/4 cup olive oil
- 1/2 cup chicken broth
- 1 large package of sliced mushrooms
- 1 small bag of fresh baby spinach
- 1 dash Weber Herb and Garlic Seasoning
- 8 oz shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and arrange the chicken breasts in a baking dish. Season with salt, pepper, and seasoning.
- Sauté mushrooms in olive oil until soft, then add spinach until wilted.
- Mix cream cheese, olive oil, and chicken broth until smooth.
- Assemble the casserole by layering chicken, then adding sauce, mushrooms, and spinach.
- Bake for 20 minutes covered, then uncover and bake an additional 20 minutes. Add cheese and bake until bubbly.
Notes
Using thin-sliced chicken promotes even cooking. Freeze the casserole before baking for future convenience.
