Ingredients

  • 6 thin-sliced chicken breasts
  • 1 container (8 oz) green onion cream cheese
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1 large package of sliced mushrooms
  • 1 small bag of fresh baby spinach
  • 1 dash Weber Herb and Garlic Seasoning
  • 8 oz shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and arrange the chicken breasts in a baking dish. Season with salt, pepper, and seasoning.
  2. Sauté mushrooms in olive oil until soft, then add spinach until wilted.
  3. Mix cream cheese, olive oil, and chicken broth until smooth.
  4. Assemble the casserole by layering chicken, then adding sauce, mushrooms, and spinach.
  5. Bake for 20 minutes covered, then uncover and bake an additional 20 minutes. Add cheese and bake until bubbly.

Notes

Using thin-sliced chicken promotes even cooking. Freeze the casserole before baking for future convenience.
