This colorful and ultra-refreshing salad combines the distinct sweetness of ripe peaches with the earthy taste of chickpeas, all enveloped in a zesty and sweet honey lime dressing.

- 1 (15 oz) can chickpeas, rinsed and drained
- 2 ripe peaches, diced
- ½ cup thinly sliced red onion
- ½ cup diced cucumber
- ¼ cup chopped fresh mint
- ¼ cup crumbled feta (optional)
- 3 tablespoons fresh lime juice
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon Dijon mustard
- Salt and black pepper, to taste
Instructions
- Combine the fresh lime juice, honey, olive oil, Dijon mustard, and a pinch of salt and black pepper in a small bowl. Use a whisk to blend these ingredients into a smooth dressing.
- In a large mixing bowl, add the diced peaches, sliced red onion, diced cucumber, rinsed chickpeas, and if you like, the crumbled feta cheese. Fresh mint leaves should be chopped coarsely and added for that fragrant touch.
- Pour the prepared dressing over your salad mix. Use a spatula to gently toss everything until the ingredients are well coated with the dressing. Ensure everything is mixed thoroughly but be gentle to retain the structural integrity of the peaches and chickpeas. Once mixed, cover and chill the salad for at least 15 minutes to allow the flavors to meld together perfectly.
Notes
This salad can be made a day in advance. Store it covered in the refrigerator, but add the mint just before serving to keep its flavor fresh. If the peaches are very ripe, handle them gently to avoid bruising while mixing.
