  • 1/4 cup crumbled feta or cotija cheese (optional)
  • 1/2 cup plain Greek yogurt or mayonnaise
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 12 chipotle peppers in adobo, minced
  • 1 tbsp honey or maple syrup
  • 1/2 tsp garlic powder

Instructions

  1. Begin by tossing your diced sweet potatoes with olive oil, salt, and pepper in a mixing bowl. Once well-coated, spread them out on your prepared baking sheet in a single layer. Roast in the preheated oven for 25 to 30 minutes, stirring halfway through, until they are tender and lightly browned.
  2. In a small bowl, whisk together the Greek yogurt (or mayonnaise), fresh lime juice, lime zest, minced chipotle peppers, honey (or maple syrup), and garlic powder.
  3. In a large bowl, combine the roasted sweet potatoes with black beans, corn, red onion, and cilantro. Pour the prepared dressing over these ingredients and toss gently to coat everything evenly.
  4. For the best flavor, chill your salad in the refrigerator for 20 to 30 minutes before serving.
