Ingredients

  • 16 ounces cream cheese (softened)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons coconut oil or vegetable shortening
  • Optional: Crushed nuts, sprinkles, sea salt for topping

Instructions

  1. Start by preheating your oven to 325°F (165°C). While it’s heating up, take an 8×8-inch baking pan and line it with parchment paper, making sure it overhangs slightly on the sides. This will help you remove the cheesecake easily once it’s baked.
  2. In a large mixing bowl, combine the softened cream cheese and granulated sugar. Beat these together using a hand mixer until the mixture is creamy and smooth. Next, add in the vanilla extract, eggs, and sour cream; mix these together until they’re well incorporated.
  3. Pour the prepared cheesecake batter into your lined baking pan. Pop it into the oven and bake for about 35 to 40 minutes. You’ll know it’s done when the edges are set, but the center will still have a slight jiggle.
  4. After cooling, move the cheesecake to the freezer for at least 2 hours until it’s firm. Once set, take it out and cut it into bite-sized squares.
  5. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until fully melted and smooth.
  6. Take each cheesecake square and dip it into the melted chocolate, allowing the excess to drip off. Place the coated bites on a baking sheet lined with parchment paper.
