  • 1 large English cucumber, sliced into chunks
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives, pitted
  • 4 oz block feta cheese, sliced or cubed
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • ½ teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Start by washing your vegetables under cool running water. For the tomatoes, cut them into wedges—this will make them easier to mix into the salad while allowing their juices to seep into the other ingredients. The cucumber should be sliced into chunks for a satisfying crunch, and the red onion should be sliced thinly to ensure its flavor is evenly distributed throughout the salad. Place all these prepared ingredients into a large salad bowl.
  2. Once you’ve placed the prepared tomatoes, cucumber, and red onion in the bowl, add in the Kalamata olives. Gently toss everything together using your hands or a large spoon, ensuring an even mix of flavors while being careful not to crush the tomatoes. This step helps to enhance the overall flavor profile of the salad as the juices from the tomatoes and olives will start to coat the vegetables.
  3. Next, take your block of feta cheese and cut it into large slabs or cubes. Arrange these on top of the salad mixture. In a small bowl, whisk together the olive oil and red wine vinegar.
