- 1 cup unsalted butter
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 3 cups sweetened shredded coconut
- 1 can (14 oz) sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips (optional)
- 1 large egg
- 1/2 cup toasted shredded coconut (for topping)
Instructions
- Start by preheating your oven to 350°F (175°C). Line your baking dish with parchment paper, allowing a slight overhang.
- In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
- Add in the all-purpose flour and salt, mixing until crumbly. Press this into the bottom of your prepared baking dish and bake for 12-15 minutes, until lightly golden.
- While baking, mix sweetened shredded coconut, sweetened condensed milk, vanilla extract, and egg in a bowl until well combined. Optionally, stir in chocolate chips.
- Once the crust has cooled slightly, spread the coconut filling evenly on top and sprinkle toasted shredded coconut. Bake for an additional 20-25 minutes.
- Allow to cool completely in the pan before slicing.
