Ingredients

  • 1 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3 cups sweetened shredded coconut
  • 1 can (14 oz) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips (optional)
  • 1 large egg
  • 1/2 cup toasted shredded coconut (for topping)

Instructions

  1. Start by preheating your oven to 350°F (175°C). Line your baking dish with parchment paper, allowing a slight overhang.
  2. In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
  3. Add in the all-purpose flour and salt, mixing until crumbly. Press this into the bottom of your prepared baking dish and bake for 12-15 minutes, until lightly golden.
  4. While baking, mix sweetened shredded coconut, sweetened condensed milk, vanilla extract, and egg in a bowl until well combined. Optionally, stir in chocolate chips.
  5. Once the crust has cooled slightly, spread the coconut filling evenly on top and sprinkle toasted shredded coconut. Bake for an additional 20-25 minutes.
  6. Allow to cool completely in the pan before slicing.
