  • ½ cup of cherry tomatoes, quartered
  • ¼ cup of red onion, finely diced
  • Juice of 1 lime

Instructions

  1. Start by preparing the marinade for your fish. In a shallow dish, mix together the zest and juice of two limes, coconut milk, olive oil, minced garlic, red pepper flakes, and a pinch of salt and pepper. Add the fish fillets, ensuring each piece is thoroughly coated. Cover the dish and refrigerate for at least 15 to 20 minutes.
  2. While the fish is marinating, prepare the avocado salsa. In a separate bowl, combine the diced avocado, quartered cherry tomatoes, finely diced red onion, juice of one lime, and season with salt and pepper to taste. Carefully toss the mixture to ensure everything is well combined.
  3. Once the fish has marinated, heat a large skillet over medium heat and remove the fish fillets from the marinade. Place the fillets in the skillet, cooking for about 3 to 4 minutes on each side, or until the fish is opaque and flakes easily.
