- 1 lb elbow macaroni
- 1 tablespoon olive oil
- 1 lb ground beef
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 24 oz jar of marinara or pasta sauce
- 1/2 teaspoon dried oregano
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 2 cups shredded sharp cheddar cheese, divided
- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1/4 cup grated Parmesan (optional)
- Fresh parsley or basil, chopped (for garnish)
Instructions
- Start by bringing a large pot of salted water to a rolling boil. Add the elbow macaroni to the boiling water and cook according to package instructions until it is just al dente. Once cooked, drain the macaroni well and set it aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the finely chopped onion and sauté for about three minutes until it becomes translucent. Add the minced garlic and cook for an additional 30 seconds.
- Add the ground beef to the skillet and break the meat apart as it cooks. Continue cooking until the beef is fully browned and no longer pink.
- Pour the marinara sauce over the browned beef and add the oregano, Italian seasoning, paprika, and salt and pepper. Stir well and simmer for about 5 to 7 minutes.
- In a large mixing bowl, combine the cooked macaroni with the meat sauce, 1 cup of cheddar cheese, mozzarella cheese, and sour cream. Stir well.
- Grease your baking dish and pour the pasta and meat mixture into the dish, spreading it evenly. Top with remaining cheddar cheese. Cover with foil and bake for 20 minutes, then uncover and bake for another 10 to 15 minutes.
- Let it rest for 5 to 10 minutes before serving. Garnish with fresh parsley or basil.
Notes
Always taste the meat sauce before combining with the pasta to adjust seasoning.
