Instructions
- Start by melting 2 tablespoons of cowboy butter in a large skillet over medium heat. Once the butter has melted and is bubbling slightly, add the finely chopped onion and minced garlic. Cook them for about 3–4 minutes, stirring occasionally, until they become fragrant and translucent.
- Next, stir in 4 cups of corn into the skillet. Sauté the corn for about 5–6 minutes.
- Once the corn is heated and lightly caramelized, reduce the heat to low. Pour in 1/2 cup of heavy cream and 4 oz of cream cheese, stirring continuously until the cream cheese melts and the mixture becomes smooth.
- Add salt, black pepper, and 1/2 teaspoon of paprika to the skillet.
- Fold in 1 cup of shredded cheddar cheese into the mixture, stirring until it melts completely.
- Before serving, turn off the heat and stir in an additional tablespoon of cowboy butter and garnish with freshly chopped parsley or chives.
