Description
This Homemade Lasagna Soup is a comforting dish that combines the delightful flavors of classic lasagna with the ease of a soup.
Ingredients
Scale
- 1 pound ground beef or Italian sausage
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef broth
- 2 teaspoons Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 8 ounces lasagna noodles, broken into smaller pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 cup ricotta cheese
- 2 tablespoons chopped fresh parsley or basil
Instructions
- Begin by heating a large pot over medium heat. Once hot, add the ground beef or Italian sausage. As it cooks, use a spatula or wooden spoon to break the meat into smaller pieces. Cook until the meat is fully browned, which should take about 5 to 7 minutes. After it’s browned, carefully drain any excess fat to ensure your soup isn’t overly greasy.
- Next, you’ll want to add the chopped onion to the pot. Allow it to cook for about 5 minutes until it becomes soft and translucent. This will add great flavor to the soup. Once the onions are softened, stir in the minced garlic, cooking for an additional 30 seconds until fragrant.
- In this step, introduce the tomato paste into the pot, stirring well to coat the meat and onions. The tomato paste will provide depth of flavor. Then, pour in the crushed tomatoes and beef broth, mixing thoroughly. Season this mixture with Italian seasoning, red pepper flakes (if you’re feeling adventurous), and salt and black pepper to taste.
- Bring the entire mixture to a boil. Once boiling, reduce the heat to let it simmer gently for 20 minutes. This allows the flavors to meld beautifully together.
- After simmering, toss the broken lasagna noodles into the soup. Allow them to cook for about 10 to 12 minutes, stirring occasionally, until they become tender. This is the moment when your soup begins to take on that iconic lasagna essence!
- Now it’s time to bring in the creaminess! Reduce the heat to low and stir in the shredded mozzarella and grated parmesan cheese. Continue to stir until the cheeses are fully melted, creating a rich and creamy base for your soup.
- The final touch is to serve the soup hot. Ladle it into bowls and top each serving with a generous spoonful of ricotta cheese and a sprinkle of fresh parsley or basil for that extra pop of flavor. Enjoy every warm, cheesy bite of this delicious dish!
Notes
Feel free to adjust the amount of red pepper flakes according to your spice preference. They can be omitted entirely if you prefer a milder flavor.
