  • 1 cup mini marshmallows

Instructions

  1. Start by preheating your oven to 375°F (190°C) to get it nice and warm. While your oven heats, peel and chop the sweet potatoes into small cubes, ensuring they cook evenly.
  2. Place the cubed sweet potatoes into a large pot and cover them with water. Bring to a boil and let them cook until they are tender, which should take about 15-20 minutes. Once done, drain the water thoroughly.
  3. Transfer the boiled sweet potatoes to a mixing bowl and mash them until smooth. Add in the brown sugar, cinnamon, nutmeg, salt, milk, butter, and vanilla extract. Stir everything together until well combined.
  4. Beat the large egg separately before adding it into the sweet potato mixture. Incorporate it fully to ensure a uniform blend.
  5. Pour the sweet potato mixture into a greased 9×13-inch baking dish. Even out the top for consistent baking before sprinkling over the mini marshmallows and chopped pecans evenly.
