Instructions
- Start by preheating your oven to 375°F (190°C) to get it nice and warm. While your oven heats, peel and chop the sweet potatoes into small cubes, ensuring they cook evenly.
- Place the cubed sweet potatoes into a large pot and cover them with water. Bring to a boil and let them cook until they are tender, which should take about 15-20 minutes. Once done, drain the water thoroughly.
- Transfer the boiled sweet potatoes to a mixing bowl and mash them until smooth. Add in the brown sugar, cinnamon, nutmeg, salt, milk, butter, and vanilla extract. Stir everything together until well combined.
- Beat the large egg separately before adding it into the sweet potato mixture. Incorporate it fully to ensure a uniform blend.
- Pour the sweet potato mixture into a greased 9×13-inch baking dish. Even out the top for consistent baking before sprinkling over the mini marshmallows and chopped pecans evenly.
