- 1 tbsp oil
- 1 small onion, diced
- 1/2 bell pepper, diced
- 2 cups fresh baby spinach, chopped
- 1 1/2 cups cottage cheese
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Begin your quiche-making adventure by preheating your oven to 375°F (190°C). While the oven warms up, take a 9-inch pie dish or a quiche pan and grease it thoroughly with oil to prevent sticking.
- Heat a skillet over medium heat and add the oil. Once the oil is heated, toss in the diced onion and bell pepper. Sauté these ingredients until they soften, which should take about 3 to 4 minutes. Once softened, add the chopped spinach to the pan.
- In a large mixing bowl, combine the cottage cheese, eggs, shredded cheddar cheese, milk, garlic powder, Italian seasoning, salt, and pepper. Use a whisk to blend the ingredients until they’re well combined.
- Now that your vegetables have cooled slightly and your egg mixture is ready, stir the sautéed vegetables into the egg mixture. Pour the mixture into your prepared pie dish, ensuring it is spread evenly across the surface. Place the dish in the oven and bake for 30 to 35 minutes.
