Ingredients

  • 2 cups grated zucchini, squeezed dry
  • 1 cup cottage cheese
  • 4 large eggs
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup chopped fresh chives
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Cooking spray or olive oil, for greasing

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with cooking spray or olive oil.
  2. Grate the zucchini and squeeze out as much moisture as possible using a clean kitchen towel.
  3. In a large mixing bowl, whisk the eggs until frothy. Stir in the cottage cheese, grated zucchini, cheddar cheese, and chives. Add salt and pepper to taste and mix well.
  4. Pour the mixture into the prepared baking dish and bake for 25-30 minutes until the top is set and golden.
  5. Let it cool for five minutes before slicing into six portions and serving warm.

Notes

If your zucchini is particularly moist, you may need to squeeze it a second time to remove excess liquid.
