- 2 cups grated zucchini, squeezed dry
- 1 cup cottage cheese
- 4 large eggs
- ½ cup shredded sharp cheddar cheese
- ¼ cup chopped fresh chives
- Salt, to taste
- Freshly ground black pepper, to taste
- Cooking spray or olive oil, for greasing
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with cooking spray or olive oil.
- Grate the zucchini and squeeze out as much moisture as possible using a clean kitchen towel.
- In a large mixing bowl, whisk the eggs until frothy. Stir in the cottage cheese, grated zucchini, cheddar cheese, and chives. Add salt and pepper to taste and mix well.
- Pour the mixture into the prepared baking dish and bake for 25-30 minutes until the top is set and golden.
- Let it cool for five minutes before slicing into six portions and serving warm.
Notes
If your zucchini is particularly moist, you may need to squeeze it a second time to remove excess liquid.
