Description

This cowboy butter chicken linguine is a creamy and savory pasta dish that combines rich flavors and a hint of spice.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 2 chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to spice preference)
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 cup grated Parmesan cheese
  • 8 oz linguine pasta, cooked al dente
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat a large skillet over medium-high heat. Melt the unsalted butter and olive oil together.
  2. Add the chicken pieces, seasoning with salt, pepper, smoked paprika, cayenne, thyme, and onion powder. Cook for 6 to 7 minutes until browned.
  3. Remove the chicken and set aside. In the same skillet, sauté garlic until golden.
  4. Pour in chicken broth and scrape up browned bits. Let simmer for 2 to 3 minutes.
  5. Reduce heat, stir in heavy cream, lemon juice, and Parmesan until thickened, about 3 to 4 minutes.
  6. Return chicken to skillet, add linguine, and mix well to coat.
  7. Garnish with parsley before serving.

Notes

To ensure chicken is cooked to 165°F, use a meat thermometer. Pasta should be al dente for best texture.
